Christmas Countdown: Day 7




Good morning! Today, I'm gonna take you back to the early 80s and introduce you to one of my verymostfavorite cookies, oatmeal frosties. Theoretically, the recipe could be considered vintage, it's been around for so long. I adored these cookies growing up and hope you'll like 'em too. I used Recipe Girl's recipe for Pecan Sandies as a base.You'll need:

2 cups or 250 grams of flour
1/4 cup or 60 grams of chopped pecans or oatmeal (Haferflocken)
a pinch of salt
3/4 cup or 130 grams of sugar
9 Tbs. or 250 grams of softened butter (I know, but it's so worth it!)
2 tsp. or Teelöfel of vanilla extract (flüssiger Vanille Extrakt)
1/4 cup powdered sugar

Preheat oven to 350°F or 200°C. Mix flour, pecans or oatmeal, and salt in one bowl. In another bowl, mix sugar and butter with a mixer until fluffy, about 2 minutes. Beat vanilla extract in. Then, slowly add the flour mixture; it might be crumbly, but this is usually not the case because the butter's got your back. If the batter is too sticky, just add a little flour. Roll batter into little balls and bake until golden brown (about 20 minutes). Take cookies out of the oven, let them cool for ten minutes, and then roll them in powdered sugar. Store in a tin can to keep fresh. Enjoy!
